Best OS for development

I'm heading away in a month for about 3 weeks, I have a spare vps, want to do some remote development on my stuff while I'm on vacation. I have my iPad with me as I don't own a working laptop, any ideas?

The best OS for development is the same OS you'll eventually deploy whatever you're developing to.

If your server runs Ubuntu, your development machine should run Ubuntu, and so on.
