A whole 10 minutes? That's a shame.
Probably quicker than waiting for an answer, I wasted  5 minutes of my life looking for an answer for personal reasons. I know the OpenSUSE installer has that capability, unfortunately the Anaconda installer seems to lacks it.

My best guess is pressing ALT+F2 to open a terminal and edit the config file by hand before it reboots.

I should have put that in purple, sorry!

Did you find your answer? If you found out a workaround, I would love to know.
I wish I found a solution.

Instead, I just downloaded the full ISO, rebooted, and now am using IPMI to install that.

If I screw up networking (probably will, LOL) I can fix it once it's installed. That's easier than trying to do it in the installer.

If a VPS Provide can't install Centos6...

Lets not go down that road again, I bet many other providers have goofed up. Difference is that it isn't posted in public.

I haven't read the original post before it was edited but from the topic it looks like an "interesting" discussion that perhaps should be taken up with the developers. How to go back and change values during install instead of stopping and doing it all over again.

The question was not "how do I install CentOS?" or "How do I set up the network" that I have all figured out.

I was simply curious if there was a way to go Back to the setup step with that. Looks like there isn't.

Then I decided that if I'm going to bother starting over the install I'd down the minimal ISO rather than the netinstall ISO.

Ans then I didn't deal with IP configuration until the machine was installed and running because it was easier anyway.

Where in that is a stupid question - nowhere. Maybe it could have been clearer, but I honestly don't think I'm really incompetent anymore. I'm confident that I can resolve most if not all things that need to be taken care of on nodes and customers' VPSes and if not I know who to ask or pay for assistance to get it resolved as quickly if I had done it myself.

That said, I was able to set up a KVM node today (in fact, this server in question) on the first try and it is working great. Just need to wait for RAID to sync because it's quite slow right now LOL. If it's still slow, I'll buy the upgrade to four drives instead of two or fine some other solution.

You shouldn't have edited the original post.

Editing it (removing everything) makes the question look "odd".

Sorry, I simply didn't see the need for the question when I had already just resolved it. Sorry for not wanting to waste helpful people's time!

Suggestion for next time:

Edit the original with your findings, instead of removing the content. :)
