If I click MESSAGE PREVIEW button and it cuts off most of the email does that mean it would send it like that too?

Possibly. Why not send it to yourself first just to see how it's delivered? Weird that the preview would cut it in half. Better send it to yourself first to ensure it'll be delivered properly.

No, its just WHMCS doing what it does best.. been buggy.

Yes. You most likely have a special character or unclosed HTML tag.

It's a preview. It shows you what would be sent. No brainer.

I figured it out - WHMCS added random 


 
 and that was causing problems so I removed them and replaced them with regular spaces. All fixed!
